Healthy Mummy Brownies with Avocado

Spooky Mummy Brownies with Avocado make for a perfect healthy Halloween dessert for kids! They're full of all the lovely nutrition and healthy fats, intensely rich chocolate flavor & easy to make!

Ingredients
  

FOR AVOCADO BROWNIES

  • 1 medium avocado
  • ¼ cup coconut oil (60ml)
  • cups flour (170 gram)
  • 40 gram cocoa powder , unsweetened
  • cup honey or maple syrup (80ml), the honey can be reduced to ¼ cup if you want a lower sugar variation
  • ½ teaspoon baking powder
  • teaspoon salt
  • 1 cup coconut milk (250ml)
  • 1 teaspoon vanilla extract , optional
  • ¼ cup chocolate chips or nuts (100gr), optional

FOR TOPPINGS

  • 100 gram vegan cream cheese
  • 2 tablespoons coconut milk or any non-dairy milk , might add 1 or 2 tbsp more if needed
  • 2 tablespoons icing sugar , optional
  • 18 googly eyes

Instructions
 

For Avocado Brownies

  • Preheat your oven to 180 degrees Celsius or approximately 360 degrees Fahrenheit
  • Mask the avocado with a fork. Then whisk all the wet ingredients together - which include mask avocado, coconut oil, honey (or coconut sugar), coconut milk (or non-dairy milk you prefer)
  • Add all the dry ingredients - which include flour, cocoa powder, baking powder, salt. And mix until wet and dry ingredients are combined and smooth.
  • Spread the batter evenly in a baking pan (8.5x5.5 inch), bake for 12-15 minutes until a toothpick inserted into the center comes out clean.
  • Once the brownies are cool, cutting them into 9 small square sizes and adding the topping to make Spooky Mummy Brownies for Halloween!

For Halloween Mummy Brownies

  • Mix well cream cheese and milk until smooth. If your frosting is too thick, don't worried... you can add 1 or 2 tbsp of milk more to make it smoother and easy to put in the piping bags.
    Note: You can add 2 to 3 tbsp of icing sugar in this cream cheese frosting to bring up the flavor of your topping. Personally, I don’t want my little daughter to eat too much sweet from sugar so I did not add it.
  • Transfer the cream cheese frosting to a piping bag, close it, and cut off the corner (you can also use a small plastic baggie)
  • Drizzle the cream cheese frosting across the brownie, back and forth. Then place two Googly Eyes toward the top of each brownie.

Zoe's Notes

  • Baking tips: Do not open the oven when the cake is baking. Make sure you let the brownie cool in the pan before cutting and adding the toppings. The brownie can be a little fragile when still warm.
  • Want a lower sugar variation? you can reduce the honey (or maple syrup) to 1/4 cup (60ml). My daughter happily ate the brownie at this sugar level.
  • Avocado tips: Make sure you use a ripe avocado for this recipe. If the avocado yields to firm gentle pressure you know it’s ripe and ready to eat.
  • Don’t like Cream Cheese Frosting? You can use white candy melts, white chocolate chips instead to make the mummy bandages. All are delicious!
  • For this recipe, we used an 8×5.5 inch pan to make 9 Mummy Brownies. If you want more mummies, you can double the batch or use a mix/recipe that yields more.
  • Want the circle mummies? You can also bake your brownies in a cupcake pan so you have a lovely circle sharp of the mummy brownies. Kids will love it!
  • Store tips: Store brownies in an airtight container at room temperature for approximately 5 days.
